Sweet and Sour Baked Beans

Serves 18

INGREDIENTS:

Qty Unit Ingredient
½ lb Bacon, chopped
cups Onion, chopped
1 cup Brown Sugar
½ cup Vinegar
1 tsp Dry Mustard
1 1-lb can Kidney Beans, drained
1 1-lb can Lima Beans, drained
1 1-lb can Butter Beans, drained
1 1-lb can Green Beans, drained
2 1-lb cans Pork & Beans, not drained

DIRECTIONS:

  1. Fry bacon until crisp, drain on paper towel, saving drippings.
  2. Sauté onions in bacon fat until clear.
  3. Mix brown sugar, vinegar and dry mustard and pour over onions in frying pan. Simmer 20 minutes.
  4. Mix all beans and put in your cooking utensil. Pour onion mixture over top but do not mix. Scatter bacon pieces over top.
  5. You can cook this recipe:
    * in a crockpot (about 4 hours on medium power) or
    * bake uncovered in a casserole (350 degree oven for 50 to 60 minutes) or
    * heat in a large pot on the stovetop (simmering a half hour or until heated thoroughly).
