Avocado Salad

Cheryl found this recipe and first served it on the 2016 Garnet Hill trip. It was a smash success!

INGREDIENTS:

Qty Unit Ingredient
18 Avocados, diced
12 Roma Tomatoes, diced
4 English Cucumbers, diced
2 Red Onions, diced
1 bunch Cilantro, chopped
4 Lemons, juiced
1 cup Extra Virgin Olive Oil
Salt & Pepper to taste

DIRECTIONS:

  1. Toss first five ingredients.
  2. Dress with lemon juice and olive oil.
  3. Serve
