Gingered Pears

4 Tbs Olive Oil
12   Pears, medium ripe, cored and sliced thin
4   Granny Smith Apples, cored and sliced thin
1 cup Apple Cider
½ cup White Wine
1 Tbs Ginger


  1. Pour in enough olive oil to cover bottom of a large pot and add all the ingredients.
  2. Simmer until fruit is tender and glazed – about 15-20 minutes.
